o Due to budgetary shortfalls, the person appointed to this position may be required to take unpaid furlough days between September 1, 2009 and June 30, 2011.

TO QUALIFY YOU MUST HAVE:
... two years of cooking experience in an commercial food service facility; OR
... an associate's degree or certification in Culinary Arts program or a directly-related field.
Position also requires Lane County Food Handler's Card (or be able to obtain upon hire); strong customer relations skills and ability to communicate effectively with individuals from diverse backgrounds and cultures; ability to read menus and worksheets in English and fill in usage reports; ability to interact with co-workers in a professional, supportive, and team-oriented manner; ability to take and understand Hazard Communication Training supplied by UO. Preference given to candidates with lead work experience supervising the preparation of breakfast, lunch and dinner in a high volume kitchen, exhibition cooking experience and experience developing menus and recipes. Final candidate subject to criminal background check.
DUTIES & RESPONSIBILITIES:
This position performs a wide range of culinary and lead work. Duties include:
... directing meal preparation, production, service and clean up; creating daily prep lists; determining food placement and presentation for serving lines; cooking, including grilling, roasting, baking, frying, steaming; overseeing pizza production; completing worksheets at end of shift by recording food usage, menu comments and suggestions.
... assigning and reviewing work of cooks; training staff to prepare quality, tasteful, and eye appealing foods.
... controlling food costs through effective purchasing, production, and waste management; controlling labor costs through effective analysis of staffing needs and scheduling recommendations; assisting manager with purchasing; checking in products and supplies.
... maintaining high food safety and sanitation practices; cleaning and sanitizing work areas.

WORKING CONDITIONS:
Position requires lifting (up to 50 pounds) and exertion for short periods; ability to work in sustained rush periods during peak meal service hours; ability to stand for long periods on hard surfaces that may be slippery when wet; ability to work over heated food service areas several hours per day; ability to stoop, twist, bend, reach, and grasp with high frequency.
